Two heads of cauliflower (pref organic)
6 ounces cream cheese (pref from grassfed cows)
1 cup sour cream (pref from grassfed cows)
2 teaspoons onion powder
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter (pref from grassfed cows)
Cut florets of cauliflower off stem and wash. Steam cauliflower (see tab for steaming instructions).
Transfer cauliflower to a large bowl, and mash until smooth or blend in blender. Mix in the cream cheese, sour cream, onion powder, salt, pepper and butter.
These are great reheated! I make two batches at a time and freeze one for later. To reheat I bake in the oven and they get a little golden brown on top – DELICIOUS!
